So today is Pancake Day here in the UK and in many other places around the world. However much I love pancakes (of any variety) I would have to say that Sweden has the best tradition for celebrating Fat Tuesday… the Semla. This beautiful cardamom bun, filled with marzipan and cream and dusted with icing sugar is truly mouth-wateringly delicious!
